Why is auto-processing greyed out?
Auto-processing is not available when the task uses Specific Products. Choose All the Products or Specific Collections to turn it on.

A task on Specific Products covers a fixed list, so there is no rule to decide which new products belong to it. That is why the option is disabled and a warning explains it.
Create the task on All the Products or Specific Collections instead to watch for new products.
